SWEET POTATO COBBLER CAKE
The best ever cobbler cake made with sweet potatoes, oats, cake, and topped with melted marshmallows.
I can honestly say this is the only dessert recipe you will ever need. One, it’s easy. Two, it can be served for dessert or as a side dish and Three, it’s so good.
I mean usually you will find me eating my favorite Chocolate Cobbler Cake or the Best Buttermilk Peach Cobbler Cake Topped with Crumbled Oats Caramel Sauce and Ice Cream.
But now this is my new all-time favorite.
I love that it serves two purposes. It’s sweet enough for a dessert or if you need a dish for a potluck it’s perfect for that, too. A side dish or a dessert.
The can of yams was screaming my name today so I decided to make this cobbler. I’ve been wanting to make a sweet potato cake for awhile. It turned out better than I ever imagined. So now I have added every sweet potato dessert to my bucket list.
The filling is made with one can of yams. Because who has time to boil sweet potatoes? For you over achievers feel free to boil the sweet potatoes.
You want to be sure and drain them first or you will have a big mess and mash them so you don’t have chunks in your cobbler.
I used regular sugar and brown sugar. The brown sugar really gives it a great flavor. Other recipes call for evaporated milk, but I used heavy cream, which gives it more sweetness and a creamier texture. If you don’t have heavy cream you can substitute it for a small can of evaporated milk.
- 1 box yellow cake mix
- 1 cup old fashioned oats
- 1 can (29 oz.) yams; drained and mashed
- 1 cup heavy cream
- 3 eggs
- 1 cup sugar
- ½ cup brown sugar
- ½ teaspoon salt
- 1 cup melted butter
- 1 tsp vanilla extract
- ½ cup chopped pecans and walnuts (optional)
- 1 cup mini-marshmallows
- whipped topping
- Preheat oven to 350. Spray cake pan with non-stick spray. Set aside.
- In a large bowl combine drained yams. Mash with a potato masher. Add eggs, both sugars, cream, salt, and vanilla.
- Pour into cake pan.
- In a large bowl combine cake mix and oats. Stir together and sprinkle over sweet potato mixture. Top with pecan or walnuts. (optional)
- Evenly pour 1 cup of melted butter over entire top of cake.
- Bake for 55 minutes until golden brown. Top with marshmallows and bake for 2-3 minutes just to melt marshmallows.
