Healthy Skillet Softened Cinnamon Baked Apple Pancakes

Warm and soft apples baked in cinnamon served on top of a stack of pancakes. These gooey, healthy, cinnamon baked apples can be served on top of pancakes, waffles, oatmeal, or ice cream. They are healthy, bursting with cinnamon apple flavor, with a little butter and brown sugar.

I was staying with my grandson and wanted to surprise him with pancakes, but after I got them made I realized we were out of syrup. So, instead of throwing them out I made use of my apples.

These homemade apples are cooked in a skillet and are quick and easy to make. You can cook one apple or several at a time. I only cooked one apple for these pancakes. You can dice them or slice them, either way works. I wanted my apple smaller, more like bite size, so I diced them. You can use larger slices of apples for ice cream.

How To Make Healthy Skillet Softened Cinnamon Baked Apple Pancakes

To make these healthy skillet softened cinnamon baked apples, you will need to dice one apple. Place it in a hot skillet with butter, water, cinnamon, and brown sugar. Let them boil until they are gooey. Cover them with a lid for faster cooking and to soften them.

Ingredients

  • 1 apple. I used a Gala apple, but you can also use a Braeburn, Jonathan, Fuji, Granny Smith, or Haralson apple.
  • dash cinnamon
  • 1 teaspoon butter
  • 1 tablespoon brown sugar
  • 3-4 tablespoons water (add more, 1 tablespoon at a time if needed depending on the size of your apple)

Directions

Peel and dice your apple. Place in warm skillet with butter, cinnamon, brown sugar, and water. Bring to a boil. If you’re using a larger apple you may need to add a couple more tablespoons of water to prevent the apples from burning. You want the brown sugar to turn gooey at the same time the apples are done.

In order to do this, I covered the apples while they were cooking. If you like a little more crispier apple, cooked uncovered, until the sugar turns gooey.

Pour over pancakes, waffles, oatmeal, or ice cream. Top with cool whip, optional.

How To Prepare Your Apple Before Cooking

  • Wash and peel your apple.
  • Using a vegetable peeler, peel your apple. If you don’t have a vegetable peeler, a small paring knife will work or a regular knife.
  • Cut the peeled apple into fourths, and remove the core.
  • Dice the apple into small bite size pieces.

What Are The Best Apples To Bake With

Braeburn, Cortland, Honey Gold, Jonathan, Fuji, Gala, Granny Smith, Haralson and Newtown Pippin apples hold their shape and are best for using in pies, crisps, or other baked desserts.

Red Delicious, McIntosh and Golden Delicious will break down quicker and lose their shape faster. These apples are best for cakes and sauces.

Pro Tip: Only use apples that are in season. Out of season apples will be less flavorful.

Choose apples that are firm and do not have any bruises or bug holes.

Avoid apples that are overly hard or too green or yellow for their kind.

How Should Apples Be Stored

To get the full flavor and crunch from apples, keep them stored in the refrigerator.

You can store them in a container or plastic baggie, making sure they get air flow.

They can be kept for up to 2 weeks in the refrigerator.
