They are fun and easy to make. All you do is bake this moist and delicious Pumpkin cake, then cut into squares. Cut the squares in half and fill the middle with a scoop of ice cream. It’s a mouthwatering combination of Pumpkin cake and ice cream!

- 3 C. Flour
- 1-1/2 Cup Oil
- 4 Eggs
- 2 Cups Pumpkin
- 2 Cups Sugar
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. ginger
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 tsp. nutmeg
- 1 tsp. salt
- 1 c. nuts (optional)
- Preheat oven to 450.
- Mix all ingredients together.
- Pour into a greased and floured cake pan.
- Turn oven down to 350 and bake until done.
You can also use 2 loaf pans if you prefer.
