Fall Pumpkin Pie Spiced Pudding

If you’re like me, you love everything pumpkin. I cannot get enough of it and wonder why we only eat it during the holidays.
Well, I’ve stocked up on pumpkin and I’m ending that tradition in my house….from now on our tradition is to eat pumpkin all year round. Because I’m always happy when I’m eating pumpkin!
Since I’m having pumpkin all year round I have to come up with more recipes…..so I made this pumpkin pie pudding that is absolutely delicious.
It’s everything you love about pudding. It’s smooth, it’s creamy, and it’s full of pumpkin pie flavors. It’s definitely going to be a hit in my house all year long.
You can serve it warm with ice cream or cookies……or enjoy it by itself.

Pumpkin Pie Pudding
A delicious homemade pudding made with pumpkin pie filling and spices. Perfect for Thanksgiving dinner!
Ingredients
- 1 cup pumpkin pie filling (with all the spices)
- 3 tbsp. cornstarch
- 2/3 cups sugar
- 1-1/2 cups milk
- 2 tbsp.butter
- 1 tsp. pumpkin pie spice
Instructions
- In a medium size saucepan combine sugar, cornstarch and pumpkin pie spice. Stir then add milk and pumpkin pie filling.
- Stir over medium heat until starts to boil, stirring constantly. When it begins to boil remove from heat.
- Stir in butter.
- Pour into bowls, top with cool whip.
