Instant Pot Roast Beef Recipe
A perfect pot roast meal for a Sunday afternoon or a quick meal during the week. It’s easy to prepare, just add all your ingredients in the Instant Pot and cook for one hour.
Cooking this pot roast in an Instant Pot means you can serve dinner in no time. What used to take 6-8 hours cooking in a crock pot now only takes one hour.
What Cut of Meat Do I Use?
Boneless beef chuck roast is my first choice. It’s the most tender and juicy cut of meat for your pot roast.
Other options are rump roast or bottom round.
How To Make Instant Pot Roast Beef?
- Sear: Put Instant Pot on Saute and add 2 tablespoons oil. Place roast in Instant Pot and sear on both sides until brown.
- Red Wine: Once the roast is seared, you will add 1/2 cup red wine. Let boil 3-5 minutes. You can substitute red wine for beef broth.
- Seasoning: I used 1-1oz. packet Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix. In a small bowl you will combine 1/2 cup beef broth, tomato paste, and Hidden Valley seasoning packet. Pour this mixture over the pot roast.
- Vegetables: Add potatoes, carrots, onion, and beef broth. Do not cut the potatoes. Leave them whole. I used baby cut carrots and did not cut them, cook them whole as well.
- Cook: Secure the lid and press Pressure Cook, cook on High and set for 60 minutes. Release stem and serve when done.
- Gravy: When the pot roast is finished remove from the Instant Pot, including the vegetables. In a small bowl mix a little water with cornstarch. Pour into beef broth. Cook on Saute until thickened. Add additional water/cornstarch mix if needed until desired thickness is obtained.

- Oven-roasted asparagus
- Green beans

Ingredients
- 3 lbs. Chuck roast
- 2 tablespoons olive oil
- 1 packet Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
- 1/2 cup red wine
- 2 cups beef broth
- 3 large carrots
- 1 medium onion
- 4-5 round potatoes
- 2 tablespoons tomato paste
- Gravy!
- 1/4 cup cornstarch whisked with 1/2 cup cold water
Instructions
- Set Instant Pot on Saute and add 2 tablespoon oil. Place roast in Instant Pot and sear on both sides.
- Add in 1/2 cup red wine. Let boil 2-3 minutes while mixing spices.
- In a small bowl combine 1/2 cup beef broth,tomato paste, and Hidden Valley seasoning packet.
- Stir, pour over roast. Add vegetables. Add remaining beef broth making sure you don't go over the MAX line in the Instant Pot.
- Close lid securely, set to Pressure Cook for 60 minutes.
- * Do not cut potatoes, leave them whole.
- * You can substitute the red wine for beef broth.
