This oatmeal bread is everything you need for breakfast all in one. It’s made with Old Fashioned Oats. All you do is put oats in a blender or food processor and blend until it’s fine like flour. Its much easier {and cheaper} to make your own oat flour!

Then you’ll add vanilla Greek yogurt and bananas. It’s sweet, healthy, and delicious! I even used a more healthy sugar. I use Coconut sugar in everything instead of processed white sugar. It’s sweeter and healthier.

Healthy Breakfast Oatmeal Bread with Old Fashioned Oats Greek Yogurt and Bananas

Cook Time: 50 minutes
Total Time: 1 hour 5 minutes

A sweet and healthy oatmeal bread made with old fashioned oats, Greek yogurt, and bananas.

Ingredients

  • **1-1/3 Cups Old Fashioned Oats
  • 2 Eggs
  • 1 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 1/2 Cup Vanilla Greek Yogurt
  • 1 Cup mashed bananas
  • *3/4 Cup Coconut sugar
  • 1/4 Cup Coconut oil

Instructions

  1. Preheat oven to 350. Grease a loaf pan and set aside.
  2. In small bowl whisk together eggs, oil, and yogurt then add in the sugar.
  3. In a medium sized bowl combine oat flour, soda, and salt. Stir in wet mixture then gently fold in mashed bananas.
  4. Pour in greased pan and bake about 40-50 minutes until done. Test by inserting a toothpick in the center. If it comes out clean it is done.

Notes

*You can substitute Coconut sugar for regular sugar.

**Blend oats in a food processor until they are fine like a flour.
