These delicate Lemon Lime Cookies are incredibly tender and have a wonderful burst of citrus flavor. They are delicious with a cup of coffee or tea.

I wanted to make a simple cookie today using my lemons. They were not happy sitting in the bowl all by their self.

Then the limes were crying from their lonely produce bowl, so I re-united both the lemons and the limes and made these Lemon Lime {Cookie} Slices. I am a fruit uniter like that.

Then the green and yellow sprinkles wanted to come out and play, so I rolled the cookies in the sprinkles. Don’t they make the cookies look pretty.

And then guess what happened? I ate one!

You don’t believe that I only at one??

They are perfect with some afternoon coffee or tea. You must try them!!

Cook Time: 12 minutes
Total Time: 37 minutes

These delicate Lemon Lime Cookies are incredibly tender and have a wonderful burst of citrus flavor.

Ingredients

  • 1-3/4 cups all purpose flour
  • 1/2 cup milk
  • 1 tsp. baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1 tbsp. grated lemon zest
  • 1 tbsp. grated lime zest
  • 2 tbsp. freshly squeezed lemon juice
  • 2 tbsp. freshly squeezed lime juice
  • 2/3 cup colored coarse sugar

Glaze

  • 3/4 cup sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons lime juice

Instructions

  1. Stir 2 teaspoons lemon and lime juice into milk; set aside.
  2. Stir together flour, baking powder, soda, and 1/4 teaspoon salt.
  3. Beat butter for 30 seconds; add sugar and beat till fluffy. Add egg and lemon and lime zest; beat well.
  4. Add dry ingredients and milk mixture alternately to beaten mixture, beating well after each addition.
  5. Drop from a teaspoon 2 inches apart onto a cookie sheet. Bake at 350 12-14 minutes.
  6. Cool on wire rack.
  7. Once cookies have cooled, roll edges in lemon glaze then roll in colored sugar.

Glaze

  1. Stir together sugar and juices.

Notes

They are delicious with a cup of coffee or tea.
